Standard Strategy
Maneater is a relatively straight forward fight, but requires a measured approach. Using a magic weapon (like the Crescent Falchion) or a Turpentine buffed weapon is advised. When the fight begins, run towards Maneater then pull back a bit as he gets close. He will leap forward. Dodge the leap attack and then use this opportunity to attack his tail. If done correctly, you will sever the tail (limiting his attack options) and do large damage to him. After this, there are a number of attacks he can do, including flying away before he swoops back in. Try to stay in front of him at medium range, blocking/dodging his melee attacks or rolling through his sonic wave projectile attack. Only attack Maneater after he commits to an attack first.
When Maneater gets to 20% health (or the fight has gone on for about 1.5 minutes) a second Maneater will spawn. You want to finish off the first Maneater as quickly as possible to avoid having two up at once. Other than the possibility of two Maneaters up at once, the fight does not change. Continue to stay in front of Maneater at medium range. If he does the lunge attack, use that opportunity to sever the second Maneater’s tail. Again, this deals large damage and will limit his attack abilities.
Cheese Strategy
Using a bow and the Thief’s Ring, you can stealth cheese Maneater. Begin the fight sniping him with your bow. When he gets close, sprint to the other side of the bridge to lose aggro. Begin sniping him again while he advances towards you. Rinse and repeat.
No Hit / Flawless Strategy
To easily no hit the Maneater boss, you need “Hyper Mode” (see below). The Crescent Falchion with a high magic build is very effective. Begin the fight waiting for his leap attack (which you need to dodge) or wait for him to do his slam attack. As legendary Demon’s Souls no hit runner FaraazKhan explains, you use this opportunity to sever his tail and one cycle the first Maneater. After the first is defeated, run to the bottom left side of the entryway stairs for the second Maneater to spawn.
